Ingredients and spices that need to be Get to make Mom’s Mutton Pulao π:
- For the Mutton stock:
- 200 gm mutton
- 1 tbsp whole mixed spices
- 1 onion cut into half
- 3-4 garlic cloves
- 1 tsp salt
- Water as required
- For the Pulao:
- 1 1/2 glass rice (wide glass) (soaked for 1/2 hr)
- 1/4 cup oil
- 3 garlic cloves
- 2 tbsp ginger julienne cut
- 1 tbsp mixed whole spices (cumin, cloves, peppercorns)
- 2 star anise, 2 brown cardamoms, 1 inch cinnamon
- 1 bay leaf
- 1 1/2 tsp salt
- 1 1/2 tsp biryani masala
- 2 small onions thinly sliced
- 1 large tomato finely chopped
- 2 1/2 glass Mutton stock (or acc to your rice)
- For salad :
- 1 medium onion thinly sliced
- 1 large tomato chopped
- 1 cucumber thinly sliced (cut into halves)
- 2 tbsp freshly chopped mint leaves
- 1 lemon juice
- to taste Salt and pepper
- For Yoghurt :
- 1 small potato (Finely chopped and boiled)
- 1 cup yoghurt
- to taste Salt
- 2 pinch All spice powder
- 2 pinch coriander powder
- 2 tbsp freshly chopped mint leaves
Steps to make to make Mom’s Mutton Pulao π
- In a big wok add the ingredients for mutton stock and let it cook till the meat is tender. Keep adding water time to time. (or pressure cook)
- When the stock is ready and meat is tender, in another wok add oil and onion.
- SautΓ© onions till light brown. Add tomatoes, spices, ginger and garlic, and meat. Mix everything well.
- Now add the stock and rice.
- Cook on medium flame till most of the water evaporates and bubbles appear.
- Now cover with lid, turn the flame to lowest and turn off after 10 mins.
- Meanwhile in a mixing bowl add all the ingredients of salad and mix well.
- In another bowl add the ingredients of yoghurt and mix well.
- Open the lid of wok and mix the rice with light hands from sides.
- Dish out and serve hot with prepared salad and yoghurt.
