  1. For white rice dhokla
  2. 2 cups rice
  3. 1 cup split gram skinned
  4. 1/2 cup split green gram skinned
  5. 1 cup sour curd
  6. 1/2 tsp baking soda
  7. 2 tsp salt
  8. 1/6 capsicum
  9. 2-3 chopped green chilli
  10. 4-5 spinach leaves
  11. 1/4 cup finely chopped coriander
  12. 20 garlic cloves chopped
  13. 1 onion chopped
  14. 3-4 tbsp oil
  15. 8-10 curry leaves
  16. 1 tbsp sesame seeds
  17. 2 tsp mustards seeds
  18. 1/2 tsp red chilli powder
  19. For brown rice dhokla
  20. 1 cup brown rice
  21. 1/2 cup split gram skinned
  22. 1/3 cup green gram skinned
  23. 1/4 tsp baking soda
  24. 1/2 cup carrot puree
  25. 1/2 cup beetroot puree
  26. 1/2 cup spinach puree
  27. 1/2 cup sour curd
  28. 2 tsp salt

Instructions to make to make Mix Dhokla

  1. For making dhokla have to prepare well in advance like idli. Soak rice, and both dal in water for at least 3-4 hours. After that drain water from mixture and add curd and salt as mentioned above for both types of dhokla. Grind it in a mixture grinder and make thick paste like batter. Add water if necessary. Cover both batter separately and keep it in warm place for 3-4 hours. As we like less sour so added less amount of curd. You can add more too.
  2. For white rice dhokla.... Add baking soda and stir well. take half amount of batter in a separate bowl and add chopped green vegetables. Stir all mixture well. Grease a tray which we used for idli. Pour mixture in each mould. Sprinkle red chilli powder on each dhokla.Pre heat steam cooker place tray and cover. Steam for for 10 minutes or more. To check enter a sharp knife and dhokla isn’t sticking on knife it means it cooked perfectly. Remove dhokla after it get little cool.
  3. Take flat plates and grease. Pour rest of the white rice batter in it. Sprinkle red chilli powder and do same as above.In a fry pan heat oil add mustard, sesame, pieces of green chilli, curry leaves. Add dhokla and mix them well.
  4. For brown rice dhokla. Add baking soda in batter and stir well. Take three purees in separate bowl. Add batter in each bowl and keep forth one plain. Stir each mixture well. Pour in idli mould plate and steam them in steam cooker. We used to eat with raw oil and garlic chutney.
